• Plants with large leaves on long purple stalks
• Native to China, introduced to North America
• A vegetable rich in vitamin C and dietary fibre
• Used in Asia for medicinal purposes, now mostly considered a weed, but used for cooking in North America
• Found at S top 1 - on the Hiking Trail, and Stop 12
