Western dock
Rumex occidentalis S. Wats.
Plant Description:
- Widespread, upright, very conspicuous plant growing up to 1 m tall
- Leaves are heart-shaped at bottom and narrow to a pointed tip
- Flowers are in very dense clusters for most of the stem; fruits are reddish-brown
- Occurs in wet areas
- Stems can be cooked and eaten in the same was as rhubarb
- The yellow roots can be used to make a yellow dye
- Found at Stops 8 and 10
